Banana Bread

Ever have one of those random urges to bake?  I recently found a new Banana Bread recipe that was quick, simple, and somewhat "healthier" compared to others. 
I had the urge to bake for several reasons.  Reason one: this is the perfect way to use your bananas, instead of wasting them when they're overly ripe.  Reason two: baking is almost therapeutic after a long and stressful week. Reason three: I love baking for others because you can brighten their day in the simplest way; plus, you'll be able to resist the temptation to eat everything in sight! Ingredients
1 cup of organic sugar
2 cups of whole wheat flour
2 eggs (or 1/3 cup of egg whites)
1 teaspoon of baking powder
1 1/2 cups of mashed banana
1/2 cup of butter (a stick)

Directions
1. Mix the (softened) butter with organic sugar
2. Add the eggs and bananas
3. Fold in the whole wheat flour and baking powder, until just combined
4. Bake at 350 degrees for 30-45 minutes
5. Bon Appetite!
